Celtic baked fish parcel

Ingredients:
- 4x white fish or salmon portions
- 1 courgette
- handful of cherry tomatoes
- 1 yellow pepper
- 2 cloves of garlic
- basil leaves (optional)-torn
- salt and freshly milled pepper
Cooking directions:
- Place chopped vegetables in the centre of a sheet of foil.
- Arrange fish on top. Season with a little salt and pepper. Fold foil loosely to make a parcel.
- Place in a pre-heated oven 200C/400F for 15-18mins.
- Open foil and slide the fish and veg onto a plate.
Suggestions:
Enjoy with some crusty bread.
