Celtic baked fish parcel

Ingredients:

  • 4x white fish or salmon portions
  • 1 courgette
  • handful of cherry tomatoes
  • 1 yellow pepper
  • 2 cloves of garlic
  • basil leaves (optional)-torn
  • salt and freshly milled pepper

Cooking directions:

  1. Place chopped vegetables in the centre of a sheet of foil.
  2. Arrange fish on top. Season with a little salt and pepper. Fold foil loosely to make a parcel.
  3. Place in a pre-heated oven 200C/400F for 15-18mins.
  4. Open foil and slide the fish and veg onto a plate.

Suggestions:

Enjoy with some crusty bread.
